Zesty Potato Soup

This isn't your ordinary potato soup. You'll find that it's filled with the flavors from our Taste the Seasons Cajun Trinity mix - onions, bell peppers, celery - plus just enough heat to turn an otherwise bland soup into an easy to make zesty meal.


4 ounces bacon, cut into small pieces

2-3 pounds russet potatoes, peeled and diced

4 cups chicken broth, divided

1 package Taste the Seasons Cajun Trinity mix

1 tablespoon flour

1 cup heavy cream

Cheddar cheese, shredded for garnish

Green onions, sliced, for garnish



In a large saucepan, cook bacon until crisp. Remove the bacon pieces and set aside.

Return the saucepan with bacon grease to medium heat and add the diced potatoes; cook for 5 minutes, stirring occasionally. Stir in 3 cups chicken broth and the Cajun Trinity mix. Increase the heat to bring to a boil, then reduce to simmer and cook 10 minutes. In a small bowl, whisk together the remaining 1 cup broth and flour; stir the mixture into the soup and cook for another 5 minutes until the potatoes are tender.

Remove about half of the potatoes plus some broth and blend in a blender or food processor until smooth. Pour back into the saucepan; stir in the cream and allow soup to heat up.

Garnish each serving with the reserved bacon pieces, cheddar cheese and green onions.
