Watermelon Cucumber Dilly Mojito Pops



So refreshing on a hot summer day, these frozen pops are a fusion of Greek tzatziki and Cuban mojito flavors. Watermelon provides a sweet base while our Taste the Seasons Tzatziki mix adds the cool cucumbers and herbs to a classic mojito for a little-bit-boozy frozen treat.


Ingredients

4 cups watermelon, seedless, chopped

1 package Taste the Seasons Tzatziki mix

1/4 cup sugar

1/4 cup light rum

1/4 cup lime juice

Directions

Place all ingredients in a blender or food processor. Cover; blend until smooth. Place a sieve over a bowl and pour the mixture through to drain off the juice and remove the pulp.

Divide the juice among six 5-ounce paper cups or popsicle molds. If using paper cups, cover each cup with foil; insert craft stick into the center. Freeze until frozen, about 8 hours.

 


Makes 6 servings
