Steamed Snapper with Seasoned Spinach

In this easy to prepare recipe, snapper is steamed with fresh spinach seasoned with our Taste the Seasons Gazpacho mix. Fresh shallots and red bell pepper augment the flavors in our mix filled with dried tomatoes and warm Spanish spices. If snapper is not available, any firm fish may be used.



2 tablespoons olive oil

2 shallots, sliced

1 medium red bell pepper, cut into 1” pieces

1 package Taste the Seasons Gazpacho mix

1/2 cup water

8 – 10 ounces fresh spinach, washed, stems removed

1 pound snapper, cut into large pieces

1/2 teaspoon salt

1 tablespoon red wine vinegar



Heat the olive oil in a large skillet over medium heat. Sauté the shallots and red bell pepper. Add the Gazpacho mix and cook, 1-2 minutes. Stir in water; add the fresh spinach and nestle the snapper in the spinach. Season with salt. Cover and simmer 15-20 minutes until the snapper is just cooked through.

Stir in the red wine vinegar; baste the fish with the vegetables and pan juices.
