Squash and Tomato Bake



The vegetables and ranch-style seasonings in our Taste the Seasons Vegetable Tray mix enhance the wonderful flavors of summer squash and tomatoes in this easy side dish. Perfect for family or potluck dinners.


Ingredients

2 pounds yellow squash and zucchini, diced 1”

1 pint cherry tomatoes, cut in half

1 package Taste the Seasons Vegetable Tray mix

1/2 teaspoon salt

1/4 cup olive or vegetable oil

1/2 cup Parmesan cheese, shredded

Cracked pepper to taste

2 tablespoons fresh basil, chopped

Directions

Place yellow squash, zucchini and tomatoes in a 7x11” baking dish. Stir in the Vegetable Tray mix, salt and oil. Sprinkle top with Parmesan cheese and add cracked pepper to taste.

Bake in preheated 350°F oven for 30 minutes. Garnish with basil.
