Spinach Mushroom Polenta

Polenta is a European side-dish made with cornmeal and is gluten free. For our recipe, the earthy flavors of our Taste the Seasons Spinach Mushroom mix are a perfect match with stone ground grits. We suggest serving with a roasted pork loin. 


2 cups chicken broth

2 cups cream

1 cup stone ground polenta grits

1 package Taste the Seasons Spinach Mushroom mix



In a medium saucepan, bring chicken broth and cream to a simmer. Slowly add grits and Spinach Mushroom mix, stirring constantly for 3 to 4 minutes. Reduce heat to low and cook for 15 to 20 minutes, stirring occasionally. Add more broth, if needed, for a creamier polenta.

Serves 4.
