Spinach Mushroom Balls

Perfect appetizers for any occasion! Serve with a honey mustard dipping sauce that complements the flavors in our Taste the Seasons Spinach Mushroom mix. These appetizers can be prepared days ahead. Partially bake for 10 minutes, cool and freeze. When needed, thaw the balls and reheat in a 350°F oven for about 10-15 minutes.


3 eggs

1 (10-ounce) package frozen chopped spinach, thawed, drained and squeezed dry

1 cup panko bread crumbs

1 package Taste the Seasons Spinach Mushroom mix

1/2 cup Parmesan cheese, grated

6 tablespoons butter, room temperature



Preheat oven to 350°F. Whisk eggs in a medium bowl. Add remaining ingredients and blend well. Roll into 1 1/4-inch balls. Transfer to a baking sheet. Bake until golden, about 20 minutes. Serve hot or at room temperature with Honey Mustard Dipping Sauce (see below).

Note: These can be partially baked for 10 minutes, cooled and frozen. Reheat the thawed balls in a 350°F oven for about 10-15 minutes.

Honey Mustard Dipping Sauce

1/4 cup sour cream

1 tablespoon prepared yellow mustard

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon lemon juice

1/8 teaspoon cayenne

In a small bowl, mix together all ingredients. Cover and refrigerate 3-4 hours or overnight.
