Southwestern Beef and Rice Skillet

Some days we just need something easy to prepare that’s still delicious. This one skillet meal is just that – using our Taste the Seasons Gazpacho mix for a robust Southwestern flavor. Serve topped with sour cream, diced avocado, sliced black olives and green onions with a lettuce salad and cornbread on the side.


1 pound lean ground beef

1 package Taste the Seasons Gazpacho mix

1 (14 ounce) can diced tomatoes, undrained

1 cup whole kernel corn, canned, frozen or fresh

1 cup long grain white rice, uncooked

2 cups beef broth

6 ounces Mexican blend cheese, shredded


In a large skillet, brown beef over medium heat; drain fat. Stir in Gazpacho mix, tomatoes with juice, corn, rice, and broth. Bring to a simmer and cover. Cook for 10 minutes; stir. Cover and cook 8-10 additional minutes until the rice is cooked.

Stir and top with cheese. Cover and cook on low for an additional 3-5 minutes or until cheese is melted.
