Seasoned Chicken and Potato Bake

We’re always looking for a new way to prepare chicken and potatoes. In this easy recipe, the vegetables and seasonings in our Taste the Seasons Vegetable Tray mix provide a mild boost of flavors. For a zestier dish, use our Cajun Trinity mix.


1/2 pound bacon

1 pound Yukon gold or red potatoes, cut into 1/2” cubes

1 1/2 pounds boneless, skinless chicken breasts, cut into 1” cubes

1 package Taste the Seasons Vegetable Tray mix

1 teaspoon salt

1 teaspoon pepper

1 tablespoon vegetable oil

8 ounces (2 cups) cheddar cheese, shredded

1/4 cup green onions, sliced


Preheat oven to 400°F. Lay bacon in a 9 x 13” baking dish. Bake 15-20 minutes. Remove bacon and drain on paper towels. Reserve grease. When cool, crumble the bacon.

In a large bowl, mix together the potatoes, chicken, Vegetable Tray mix, salt, pepper, 1 tablespoon reserved bacon grease, and vegetable oil. Place into the baking dish and bake 20 minutes. Stir and bake an additional 10-15 minutes until the potatoes are tender and chicken is cooked.

Remove the chicken from the oven and top with the cheese, crumbled bacon and green onions. Return to the oven and bake for about 5 minutes or until the cheese is melted.
