Portuguese Fish Stew

This classic stew is filled with robust and rustic warm flavors from our Taste the Seasons Gazpacho mix. If cod is not available, use halibut, haddock or bass. Serve with toasted crusty bread.


2 tablespoons olive oil

1 package Taste the Seasons Gazpacho mix

1 (14.5 ounce) can diced tomatoes in juice

8 ounces bottled clam juice

1 (6.5 ounce) can chopped clams, rinsed and drained

1 1/2 pounds skinless cod, cut into 1 1/2-inch chunks

2 teaspoons lime juice

12 clams in shells, scrubbed and steamed, optional


Heat the olive oil in a medium saucepan over medium heat. Add the Gazpacho mix and cook, stirring 1-2 minutes until fragrant. Stir in the tomatoes and clam juice; simmer 10 minutes. Nestle the clams and cod in the mixture. Cover and simmer until the fish is just cooked through, about 5 minutes. Stir in the lime juice. Add the steamed clams, if desired.
