Herbed Asparagus & Pasta Salad

The flavors of Spring greet you in this asparagus and pasta salad seasoned with cucumber and herbs in our Taste the Seasons Tzatziki mix. Garnish with feta cheese for an additional layer of flavor.


8 ounces penne pasta

1 pound asparagus, trimmed, cut into 2-inch pieces

1/4 cup olive oil

2 tablespoons lemon juice

1 package Taste the Seasons Tzatziki mix

1/2 teaspoon salt

1 pint grape or cherry tomatoes

1 cup purple onion, thinly sliced

Feta cheese, optional for garnish


Bring a large pot of water to a full boil. Add pasta and cook about 10-12 minutes until al dente. Remove the pasta to a large bowl and set aside to cool.

Add asparagus to the boiling water and cook 2-3 minutes until crisp-tender. Remove the asparagus and plunge into iced water to cool. Drain and add to the pasta. Reserve 1/4 cup of the cooking liquid.

Whisk together the olive oil, reserved cooking liquid, lemon juice, Tzatziki mix, and salt.

Add the tomatoes and purple onion to the pasta and asparagus. Pour the dressing over the mixture and stir to coat. Refrigerate until chilled. Garnish with feta cheese, if desired.
