Gingered Chicken and Corn Soup

Who doesn't love chicken soup on a chilly day? Our Taste the Seasons Vegetable Tray mix adds the finishing touch of veggies and seasonings to this soup. Use the meat from a rotisserie chicken for a "souper" easy meal.


2 tablespoons sesame oil

1 tablespoon fresh ginger, minced

2 cups cooked chicken, shredded

2 cups corn kernels, fresh, frozen or canned

1 (15 ounce) can creamed corn

1 package Taste the Seasons Vegetable Tray mix

4 cups chicken broth

Salt to taste



In a large saucepan, heat oil. Add ginger and shredded chicken; cook for 5 minutes, stirring frequently. Add the corn kernels, creamed corn and Vegetable Tray mix. Stir in the broth; add salt to taste. Bring to a simmer; cover and cook over low heat for 15 minutes.

Makes 10 (1 cup) servings
