Gazpacho Pasta Salad

Here is a new twist on traditional Gazpacho! Make a vinaigrette dressing seasoned with our Taste the Seasons Gazpacho mix and then combine with fresh tomatoes, cucumbers, green onions, Manzanilla olives, and pasta. 


1 package Taste the Seasons Gazpacho mix 

1/4 cup lime juice

3/4 cup olive or vegetable oil

1/2 teaspoon salt

12 ounces Rotini pasta

2 large tomatoes, coarsely chopped or 1 pint cherry tomatoes, cut in half

1 large cucumber, coarsely chopped

1/2 cup sliced green onions

1/4 cup Spanish Manzanilla olives, pitted and diced 


In a small bowl, whisk together Gazpacho mix, lime juice, oil, and salt. Set aside.

Cook pasta as directed on package. Rinse with cold water; drain. In a large bowl, mix pasta and remaining ingredients. Pour dressing over salad; toss to mix.
Refrigerate for several hours or overnight.

Makes 8 (1 cup) servings
