Fresh Gazpacho Salsa

Here’s a refreshing and out of the ordinary salsa. Fresh tomatoes and cucumbers are seasoned with southwestern spices in our Taste the Seasons Gazpacho mix. Adjust the heat level with the jalapeno seeds – use all for a hotter salsa. Serve with chips or as a complement to chicken, fish or pork.


4 tomatoes, chopped

1 cucumber, diced

2 jalapeno peppers, minced, membranes removed (include seeds for heat)

1/2 red onion, chopped

1/4 cup fresh cilantro, chopped

1 package Taste the Seasons Gazpacho mix

2 tablespoons lime juice

1 tablespoon olive oil

½ teaspoon salt



In a large bowl, stir together the tomatoes, cucumber, jalapenos, red onion, and cilantro.

In a small bowl, mix together the Gazpacho mix, lime juice, olive oil and salt. Pour over the vegetable mixture and stir. Refrigerate about 2 hours.
