Creamy Cajun Confetti Corn

Spice up this creamy corn side dish with Cajun Trinity vegetables and seasonings in our Taste the Seasons Cajun Trinity mix. Fresh or frozen corn may be used, making it a year-round favorite.


12 ounces thick-cut bacon, chopped

5 cups corn kernels, fresh or frozen

8 ounces cream cheese, cubed, room temperature

1 package Taste the Seasons Cajun Trinity mix

1/3 cup milk

1/2 cup green onions, chopped


In a large skillet, cook the bacon until golden and crisp. Remove the bacon to a paper-towel lined plate. Discard most of the bacon grease, leaving about 1 tablespoon in the skillet.

Add the corn to the skillet and cook over medium heat, stirring occasionally until heated through, about 6-8 minutes. Add the cream cheese and stir until melted. Stir in the Cajun Trinity mix and milk. Stir in half of the green onions and bacon.

To serve, garnish with the remaining green onions and bacon.
