Chipotle Glazed Meatloaf

This isn’t your ordinary meatloaf! Spicy and slightly smoky, this meatloaf is loaded with tangy Spanish seasonings and vegetables from our Taste the Seasons Gazpacho mix and coated with chipotle sauce. If you prefer less heat, use tomato sauce instead.


1 pound lean (90%) ground beef

1/2 pound ground pork

1 egg

1/2 cup breadcrumbs

1 package Taste the Seasons Gazpacho mix

1 teaspoon salt

3/4 cup milk

1 (7.8 ounce) can chipotle sauce


Preheat oven to 350°F.

In a large bowl, combine the beef, pork, egg, breadcrumbs, Gazpacho mix, salt, and milk. Place in a 9x13-inch baking dish and form into a loaf. Pour the chipotle sauce over the meatloaf.

Bake at 350°F for 1 hour or until the internal temperature reaches 160°F. If needed, pour a small amount of water into the baking dish to prevent the sauce from burning.

Let rest 10 minutes before slicing.
