Chicken with Gazpacho Cream Sauce

Guests and family will love this Tuscan-inspired chicken dish with simple ingredients and big flavors. Sun-dried tomatoes, cucumbers and robust seasonings in our Gazpacho Taste the Seasons mix enrich the cream sauce in this easy recipe. Pair with wines made from Sangiovese grapes, including Chianti.


2 tablespoons olive oil

4 boneless, skinless chicken breasts (1 1/2 pounds)

Salt to taste

1/2 cup chicken broth

1 cup heavy cream

1 package Taste the Seasons Gazpacho mix

2 tablespoons Parmesan cheese


Heat olive oil in large skillet over medium heat. Add chicken, salt to taste, and cook for about 15 minutes, turning until brown and cooked through to 165°F. Remove chicken to a serving platter and cover with foil to keep warm.

Increase heat to high and deglaze pan with chicken broth. Add Gazpacho mix and heavy cream. Stir continuously until reduced and thickened. Return chicken to pan and simmer with sauce about 5 minutes. Garnish with Parmesan cheese.
