Cajun Trinity Spinach Madeleine

We added lagniappe to a favorite Louisiana side dish! Spinach Madeleine, a creamed spinach often served at gatherings of family and friends, easily gets that little something extra from our Taste the Seasons Cajun Trinity mix. A delicious dish just got better!


1 (24 ounce) package frozen chopped spinach

1/4 cup butter

2 tablespoons flour

1 (5 ounce) can evaporated milk

2 tablespoons Tabasco® Green Pepper Sauce

1 package Taste the Seasons Cajun Trinity mix

1/2 teaspoon salt

8 ounces cream cheese, cubed, room temperature


In a medium saucepan, add water to cover bottom; add spinach and steam until heated through, about 8-10 minutes, while stirring occasionally. Drain and reserve 1/2 cup liquid. Set both aside.

In a large skillet over medium heat, melt butter; add flour, stirring until blended. Slowly stir in evaporated milk and the reserved spinach liquid; stir constantly until thick. Add green pepper sauce, the Cajun Trinity mix and salt. Add cream cheese and stir until cheese is melted and blended together. Stir in cooked spinach.

Transfer mixture into a 2-quart serving dish. Serve warm as an appetizer dip or as a side dish.
