Cajun Trinity Red Beans and Rice Salad

On any given Monday, you'll find Red Beans and Rice cooking in traditional South Louisiana kitchens. Perfect for the summer, this salad seasoned with our Taste the Seasons Cajun Trinity mix can be enjoyed as a refreshing and hearty accompaniment to Andouille sausage or any grilled meats.


1 package Taste the Seasons Cajun Trinity mix

1/4 cup apple cider vinegar

1/2 cup olive or vegetable oil

1/2 teaspoon salt

2 cups water

1 cup long-grain rice

1 (15.5 oz) can red beans, drained and rinsed

1/3 cup diced yellow bell pepper

1/3 cup diced celery

1/3 cup sliced green onions 



In a small bowl, whisk together Cajun Trinity mix, vinegar, oil, and salt. Set aside.

Bring water and rice to a boil in a small saucepan. Reduce heat to low, cover and cook until liquid is absorbed and rice is tender, about 15 minutes. Remove from heat and stir in the dressing. Cool to room temperature.

In a large bowl, toss seasoned rice, beans, bell pepper, celery, and green onions. Refrigerate for several hours or overnight.
