Cajun Trinity Chicken Salad

What a splendid chicken salad! Creamy and nicely spiced with our Taste the Seasons Cajun Trinity mix, it can’t get much better than this. Serve on lettuce or as a sandwich for a summer luncheon, or as a spread with crackers at your next party.


1 1/2 pounds boneless, skinless chicken breasts

1 teaspoon salt

4 ounces cream cheese, room temperature

1/2 cup mayonnaise or sour cream

1 package Taste the Seasons Cajun Trinity mix


Place chicken into a medium saucepan and add water to cover. Add salt and bring to a boil; reduce to a simmer and cook approximately 12 minutes until chicken is uniformly white and the center reaches 165°F. Remove from the water and allow to cool.

Meanwhile, in a small mixing bowl, cream together the cream cheese, mayonnaise or sour cream and Cajun Trinity mix. Set aside.

Place the cooled chicken in a food processor and pulse until chopped as desired. Transfer chicken to a medium mixing bowl; add cream cheese mixture and combine well. If dry, stir in a little more mayonnaise or sour cream. Cover and chill several hours to allow flavors to develop.


Rather than poaching raw chicken, use 4 cups rotisserie or leftover cooked chicken.

If desired, add grapes, dried cranberries, chopped apples, nuts, or other to your liking.
