Cajun Pickled Zucchini Salad

Zucchini fresh from the garden are perfectly pickled in a sweet-sour marinade seasoned with our Taste the Seasons Cajun Trinity mix. The flavors intensify over time, so it is best to prepare this salad the day before.


1/2 cup sugar

1 teaspoon salt

2/3 cup apple cider vinegar

1 package Taste the Seasons Cajun Trinity mix

1/3 cup vegetable oil

6 small zucchini (about 3 pounds), thinly sliced


In a small saucepan, combine sugar, salt and apple cider vinegar. Over low heat, stir mixture until sugar is dissolved. Add Cajun Trinity mix and vegetable oil. Pour mixture over sliced zucchini and stir. Chill 8 hours, stirring occasionally or overnight.

Makes 10-12 servings
